I never want to forget, or get too busy to just stop and take in the small moments.
Those sweet times when life hands you something and wants you to pause and appreciate.
To notice the light streaming through and resting on a cup. Or when a baby erupts with laughter in the middle of a store. Or something as simple as doing nothing.
One particular afternoon, after a day of cleaning and chores, it just seemed right to stop everything and bake cookies.
No rhyme or reason. Just a moment that I thought I needed to grab.
The afternoon sun angled in on my tea, and I stepped back just to notice and be in the moment.
Me, tea and a plate of blueberry lime cookies.
I like when these moments reach out and slow me down.
This recipe is based off of Elana's Pantry chocolate chip cookie recipe that you can find on the bag of almond flour. I tweaked things slightly and changed the flavor up to suite my moment.
Blue Berry Lime Cookie
2 cups almond flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter
zest of two limes
1 Tablespoon honey
1 Tablespoon vanilla extract
1/3 cup dried blueberries
Preheat oven to 350º. In a food processor blend everything except the dried blueberries until a dough forms. Add the dough to a bowl and stir in the blueberries. Let the dough rest in refrigerator while the oven preheats or about 1/2 an hour.
Scoop 1 Tablespoon rounds of dough onto cookie sheet covered with parchment paper. Flatten out the dough gently but not too thin.
Bake for 8 minutes just until the edges start to brown. Remove from oven and let cool. Serve and enjoy!
