Game Plan



There are pigs flying around overhead somewhere, and perhaps there are even snowballs in hell. The Cardinals are in the Superbowl!

My husband is an Arizona native, a rarity for sure. Even rarer is the Cardinal fan before this season. He has remained true to his team from the beginning. He has carried on in every season claiming "this could be the one." Well this is it baby - this is the one.

Now, I'm a Bronco's fan at heart, but being one with my husband I must cheer for the home team. Cheer for the Big Red and create a menu to remember this monumental occasion.

I'm still planning, but this is what I've got so far:
  • Cilantro Deviled eggs (with bacon)
  • Roasted Jalapeno bean dip
  • I'm thinking maybe a green chili stew, or some sort of chili con carne (if you have a good one I'm willing to try it)
  • Go Big Red Velvet cupcakes (gluten free/dairy free of course)

So far I've only got the deviled eggs banged out and tested. The dip is still in production mode and hasn't made it from my head to the plate yet. I'll let you know how that goes and post a recipe if deemed worthy.

My one deviled egg looks lonely on the plate, but come Sunday this will be full of little egg delights. I had to have my taste tester see if it was worthy enough for the big day. We came up with a few adjustments, added some bacon (not pictured), and I think it's pumped and ready to go.



Cilantro Bacon Deviled Eggs


6 Hard Boiled eggs
1 teaspoon lemon juice
1 seeded jalapeno diced fine
1/2 teaspoon cumin powder
dash of cayenne pepper
3-4 Tablespoons mayonnaise
2 Tablespoons finely chopped cilantro
Salt and pepper
Chili powder for sprinkling on top
3 pieces of bacon cooked and crumbled


Halve each hard boiled egg and place the yolk in a bowl. Add lemon juice, jalapeno, cumin powder, cayenne, and 3 Tablespoons of mayo. Mix until creamy. If it is too dry add more mayo (I find this amount changes from time to time). Add cilantro and salt and pepper to taste. Spoon yolk mixture back into the egg whites. Sprinkle each egg with chili powder and crumbled bacon.

Clearly I'm more into the food of the day, but I think I'll watch a bit this year. I'll sit with my love and cheer. And eat, maybe cheer some more, and eat.

Oh may, bacon in our deviled eggs! That's a first. Thanks for the tip. We've got a killer black bean cotija cheese layered dip that's amazing. Sometimes it's more fun to do the kitchen work and go in and out of the game...beer in hand of course!

oh, yes! Bacon + Deviled Egg = YUMZA!

Oh, and I thought the Go Big Red Velvet cupcakes were an awesome idea!
