Very Merry

I hope all of you had a very jolly and lovely holiday. Ours was nice and cozy with family and friends. I didn't spend too much time in the kitchen this year, and I haven't decided if I'm disappointed about that or not. I truly love cooking nice big special meals. However, this year I felt more like part of the party. I cooked a simple breakfast - eggs, potatoes, bacon, and sausage. Nothing fancy, but still good eats. I am a bit disappointed that I didn't get any sweet potato pie YET.

Even without the big holiday spread I was a bit too prepared on the cranberry front. I was left with an entire bag of cranberries waiting for some love. I was planning on making more muffins, but never got around to it. Then I thought I would use them to make a nice sauce for a pork loin, but never really got around to that either. I made some quick cranberry sauce the other day thinking that if they were at least whipped into something usable, maybe I would actually stop my endless cycle of procrastination. It worked.

I was looking for a simple dessert sans dairy and immediately thought - sorbet. I had my trusty cranberry sauce and some limes. Sorbet is extremely unseasonable, but it's so clean and fresh after all that heavy cookie and candy sweets. Plus, if you have a surplus of cranberry sauce it makes great use of it.

Very Merry Sorbet

2 cups leftover cranberry sauce
2 cups cranberry juice
2 Tablespoons lime juice
zest of one lime
1/2 cup light corn syrup

Mix all ingredients together and cool at least 2 hours. Pour into ice cream maker and follow manufacturers directions.

This sorbet would make a fun adult drinky poo if you throw it in the blender with some vodka and maybe a bit of Sprite. A good New Years slurpee!

Very creative idea :D. I love the festive color too, this is the first cold berry holiday dessert I've seen :).

Greetings! I found your spot from Smokey Mountain then Make a Roux. Your cranberry dessert looks refreshing. I like your sweet potato recipes too. The one that roasts the potatoes with cayenne is very similar to a recipe I make regularly. The only difference is I use honey instead of brown sugar. I look forward to more tested recipes in 2009. Blessings. Susan
